 Here's simple recipe for Poha, a popular Indian breakfast dish:


Ingredients:

- 1 cup flattened rice (poha)

- 1 small onion, finely chopped

- 1 small potato, peeled and diced

- 1 green chili, finely chopped

- 1/4 teaspoon turmeric powder

- Salt to taste

- 1 tablespoon oil

- 1/2 teaspoon mustard seeds

- A few curry leaves

- Fresh coriander leaves for garnish

- Lemon wedges for serving


Poha


Instructions:

1. Rinse the flattened rice (poha) in water a couple of times and drain well. Set it aside.

2. Heat oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter.

3. Add curry leaves, chopped onion, and green chili. Sauté until the onion turns translucent.

4. Add diced potatoes, turmeric powder, and salt. Mix well and cook for a few minutes until the potatoes are tender.

5. Reduce the heat to low and add the rinsed flattened rice (poha) to the pan. Mix gently until everything is well combined.

6. Cover the pan and let it cook for 2-3 minutes, allowing the flavors to blend together.

7. Remove the lid and give it a gentle stir. Cook for another minute or two until the poha is heated through.

8. Turn off the heat and garnish with fresh coriander leaves.

9. Serve hot with a squeeze of lemon juice on top.
