Ratatouille dish Recipe (step by step)

          Today we will learn about a great ratatouille dish recipe. Ratatouille is a dish from the Provence region of France made with eggplant, tomatoes, onions, bell peppers, zucchini, garlic and herbs simmered in olive oil. Ratatouille is a healthy dish, ratatouille recipe is a good source of Vitamin c, folic acid, vitamin B6, potassium, fiber, as well as antioxidants. You cab eat it cold, hot, for breakfast, lunch or dinner. 

Ingredients list :

  •  2 medium long egg plant ( Brinjals) 
  •  3 medium tomatoes
  •  1-1 medium yellow and green Zucchini
  •  2 tablespoon olive oil (as required) 
  •  1 tablespoon finely chopped celery
  •  1 large onion - finely chopped
  •  1 tablespoon finely chopped garlic
  •  2 medium size carrots, cut into cubes in little parts
  • 2 sprigs fresh thyme
  • 2 tablespoon butter
  • 1 cup fresh tomato puree
  •  4-5 Fresh Basil leaves 
  • Salt to teste 
  • 1 tablespoon red chilli flakes, crushed black peppercorns to taste
  • 1 bay leaf

Recipe for ratatouille

  • Heat 2 tablespoon olive oil in a deep non stick pan. Add garlic to it and fry till it turns light brown. 
  • Now slowly add onions to it and fry till it turns brown. Now add celery and mix well. Then add carrot pieces and mix well. 
  • Now add thyme leaves & butter mix well and cook around two minutes.then add tomato puree, stir well and bring to a boil.
  • Now add yellow and red capsicum & mix at well then add torn basil leaves & mix well. 
  • Then add salt, chiilliflakes, crushed pappercorns and bay leaf mix well and cook till the vegetables soften.
  • discard the bay leaf add some water and blend well.remove from heat and set aside. 
  • preheat oven to  190°C (374°F) . 
  • slice green and yellow zucchini & brinjal (egg plant) and soak them in water.slice tomatoes and set a side. 
  • spread to cooked mixture in a glass baking dish.top with alternative rows of zucchini, brinjal and tomato slice.pour some olive oil. 
  • put the dish on the preheated oven and roast for 10 to 12 minutes. 
  • Now serve hot and enjoy it.
